Hi team, in Android when mobileComposeMail is used the OS ask which program to use (for instance Gmail) and if you press "Always" it becomes the default...
Question: how can I got back to the original screen where I can choice another option?
In my findings even after I delete the APP when I load it again the default stays as the default originally chosen.
Regards

Go to system settings and remove the default option. Often that is in the app listing itself but Samsung has a specific listing for default apps in Apps / Choose default apps. Search for "default apps" in settings and it should show up.
I use three different browsers and I need to always choose "Just once" to avoid the problem when the dialog appears.

Thanks Jacque, I can't find where to remove it, I'm using a PIX (in Android Studio emulator) but can't find what should I do...
This is the Screen when getting into my APP defaults
What I'm missing?

In the third screenshot, tap "open by default" and turn the slider off.

I wonder if that's due to the emulator. Try closing it and restarting it, or use a different emulated device and see if that works. I haven't used an Android emulator for a long time since I own so many real devices, so I'm guessing at this point.
Also, if the emulator has a factory reset option in settings, that should wipe all stored preferences.
