The problem with translating mandatory legalese (GDPR compliance) into human-readable form.
A rewrite is on the way https://github.com/audacity/audacity/discussions/1225 and if you look at the source code on github, most of what gets sent up (only in online mode, note) is opt-in, with only the update checking and crash reporting opt-out.
I do use Audacity here: my usb cassette digitizer runs a bit fast, and Audacity allows me to lock in a nice 78% speed reduction and a nice noise filter. For anything more professional I've got the Harrison Mixbus, but it's overkill for many smaller jobs.
