I assume this is not possible, but thought I'd check- is there any way to change the color of the pop-up keyboard and pick lists with the iPhone?

No, they are supplied by the underlying (i)OS.

I was afraid of that. I'm working on an astronomy app that I want to keep all the colors dark red. When the built-in objects pop up it is way too bright for use after being dark-adapted. I'm going to end up using only controls which don't use any built-in iOS objects I guess...

Apple still doesn't support third-party keyboards? You'd think they'd at least make a night-vision mode themselves.

I have an astronomy app that turns the keyboard red, so there must be an 'allowed' way to do it, but that would require an external... This app isn't worth that much investment for now.

Wouldn't you just make your own keyboard?
You couldn't type into a field but set the name of a button to... and the button could look like a field.
