Just dropping something here in case someone finds this thread.
I just discovered that a properly linked Android Studio SDK path means you don't need to have the JDK path showing in the Mobile Support pane.
In my case, everything seems to work without it.

My 2¢ and a new wrinkle. Have Android testing working. Installed jdk-8u311-macosx-x64 Installed Android Studio per Klaus' recommendation. Just a quick note to say I was bitten by this.
Android File Transfer would not see my device! Had me stumped.
Switched to a different cable and all my troubles went away.

Wish I'd seen this thread before trying every other solution I could think of....

Thanks Jacque. I'm making progress. Reloaded xCode 12.5 and can now save a standalone, process it through AirLaunch, get the .ipa file and upload it through "Transfer" with no errors. Thanks for confirming my fear.
I wish the Mobile Support pane had shown red when I pointed to 12.5.1. Would have known I was in trouble from the gitgo and may not have lost my copy of 12.5.
