Great! But I how can we do this, knowing that we have no control at all on the Apple menu?

I'm no expert in custom menus - I only started testing them recently - but it's not under the Apple menu.
These items are under the application menu.
I believe (and someone may correct me if wrong) that the Quit you put in the File menu is adjusted by by the engine to appear in the Application menu on MacOS (but left in situ on Win/Lin) and the similarly with the preferences menu item you adjust in the Edit menu.

You can but test ;)
