yeah I don't think you can turn off Game Center or InApp Purchases in App IDs - and you can't change their actual ID, only their description. can you confirm you have an app ID formatted like this? "com.domainname.appname" - if so then you have an explicit app ID (i.e. you don't have an "*" in the ID)

I've used Jacque's AirLaunch to prepare binaries for submitting to TestFlight without issue - but I have been bitten by the capitalisation issue in the past and now am very careful to keep bundle Id and everything else lower case! Although, looking at the mobileGetContactData in the dictionary, the structure of what is returned looks very different to what you posted (but maybe the dictionary is out of date - it has also been known to be wrong!)
